Meet your new meal-prep MVP: soft, chocolatey breakfast cookies made with oats, banana, peanut butter and a scoop of EarthChimp Choc. They're naturally sweetened, packed with plant protein and fiber, and genuinely taste like dessert. Make a batch on Sunday and grab one on your way out the door all week. šŸŖ

Ingredients

  • 1 ripe banana
  • 2 cups oats
  • 2 scoops EarthChimp Choc
  • ½ cup peanut butter
  • 1–2 tbsp maple syrup

  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • Splash of soy milk
  • Chopped dairy-free dark chocolate

Instructions

  1. Heat oven to 350°F and line a tray with parchment.
  2. Mash the banana in a bowl until smooth.
  3. Stir in peanut butter, maple syrup, vanilla and a splash of soy milk.
  4. Add oats, EarthChimp Choc, cinnamon and salt. Mix into a thick dough.
  5. Fold through the chopped dark chocolate.
  6. Scoop ~10 mounds onto the tray and gently flatten.
  7. Bake 15 min until set at the edges. Cool before storing.
