Choc Peppermint Brownies

Fudgy, protein-packed, and pepperminty in all the right ways ❄️ These brownies are a holiday win — easy to make, hard to stop eating.

Ingredients

Dry:

  • 1/2 cup EarthChimp choc
  • 1/4 cup cocoa powder
  • 1/4 cup GF flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt

Optional:

  • Mini vegan choc chips on top ✨

  • 2 eggs (or 2 flax eggs)
  • 1/2 cup plain non-dairy yogurt
  • 2 tbsp honey (or maple)
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla
  • 1/4 tsp peppermint extract (easy does it)
  • 1/2 cup water

Instructions

  • Preheat oven to 350°F. Line muffin tin.
  • Mix dry + wet separately.
  • Combine into a thick batter.
  • Scoop into liners + top with choc chips.
  • Bake 18–22 mins (toothpick = slightly moist).
  • Cool completely for that dreamy fudgy finish.
