Chocolate Peanut Butter Frozen Yogurt Bars

Ingredients:

  • ¾ cup unsweetened coconut yogurt
  • 1 banana, mashed
  • 2 tbsp natural peanut butter
  • 1½ scoops EarthChimp Chocolate Protein Powder
  • 2 tbsp coconut oil
  • ⅓ cup vegan dark chocolate, chopped
  • ⅓ cup vegan dark chocolate chips
  • ¼ cup almonds (slivered + chopped)
  • Flaky sea salt

Instructions:

1. In a mixing bowl, add banana, coconut yogurt, peanut butter and protein powder. Mix until well combined.
2. On a baking sheet lined with parchment paper, scoop the mixture into 6 portions. Sprinkle some slivered almonds on top. Slide a popsicle stick into the centre. Freeze for 2-3 hours.
3. In a microwave-safe bowl, add chocolate chips, dark chocolate and coconut oil. Heat in the microwave for 15-20 seconds increments, stirring in between.
4. Pour the melted chocolate over the frozen yogurt bars. Working quickly, sprinkle chopped almonds and flaky sea salt on top. Freeze for 30 minutes to set and enjoy!
