Chocolate Peanut Butter Overnight Oats

🕥 Prep time: 3 mins (+ chilling time) | 🥣 Serving: 5 | Recipe by: @_wellbymell

Busy mornings don't leave much room for cooking — so let the fridge do the work overnight. You wake up to a thick, chocolatey, peanut-buttery breakfast that's already done, with 20g of protein folded right in. Grab the jar and go.

Ingredients:

  • 1/2 cup oats
  • 3/4 cup vanilla Greek yogurt (swap: plant-based vanilla yogurt to keep it vegan)
  • 1 tsp chia seeds
  • 1 scoop EarthChimp Choc
  • 3/4 cup milk, plus more as needed (swap: any plant milk — almond, oat or soy)
  • 1–2 tbsp peanut butter ("life is too short to measure your peanut butter")

Instructions:

  1. Add the oats, yogurt, chia seeds, EarthChimp Choc, milk and peanut butter to a jar or bowl.
  2. Stir well until everything's combined — add a splash more milk if it's looking too thick.
  3. Cover and pop it in the fridge overnight (or at least 4 hours).
  4. Grab it cold in the morning, give it a quick stir, and dig in.

Tip: chia seeds keep thickening overnight, so err on the looser side when you mix. A few chocolate chips or banana slices on top never hurt either.
