Choc Peppermint Brownie Bars

When peppermint candy canes meet fudgy chocolate goodness… MAGIC happens!! These no-bake brownie bars are a dreamy festive treat — and secretly packed with plant-based protein thanks to EarthChimp choc! 🎄✨💪

Ingredients

For the Bars:

  • 3/4 cup almond butter (or sunflower seed butter if nut-free)
  • 1/4 cup maple syrup
  • 1/3 cup EarthChimp choc
  • 1 tbsp cacao powder
  • 2 crushed candy canes (vegan-friendly)

For the Topping:

  • 1/2–3/4 cup vegan chocolate chips
  • 1 tbsp neutral oil (like coconut or avocado oil)
  • 2 more crushed candy canes for topping

Instructions

  • Mix almond butter, maple syrup, EarthChimp choc, and cacao powder in a bowl until dough-like.
  • Stir in crushed candy canes.
  • Press into a parchment-lined 8x8 pan. Set aside.
  • Melt chocolate chips + oil in microwave (45–60 secs). Stir until smooth.
  • Pour over base. Spread. Sprinkle more candy canes on top.
  • Freeze for 1 hour to set.
  • Slice, store in fridge, enjoy within 4–5 days! 🎉
