This Chocolate Covered Strawberry Bark is one of those recipes that looks impressive… but is ridiculously easy. Fresh strawberries, a fluffy chocolate filling, and a silky drizzle on top. Perfect for sharing (or not 😉).
Ingredients
- 8 oz organic strawberries, sliced into rounds
- 8 oz dairy-free cream cheese (or regular if preferred), softened
- 1/2 cup organic powdered sugar (or coconut sugar blended into powder)
- 1/4 cup EarthChimp choc
- 3 tbsp warm water
- 2 tbsp cocoa powder
- Splash of vanilla extract
- Pinch of pink salt or sea salt
- 1/2 cup semi-sweet chocolate chips (dairy-free if needed)
- 1/2 tbsp coconut oil (instead of butter for a plant-based option)
Instructions
- Line a baking sheet with parchment paper
- Arrange the strawberry slices into a heart shape (or any shape you love 🫶).
- Gently pat the strawberries dry with a paper towel — this helps prevent excess moisture.
- In a mixing bowl, beat the softened cream cheese and powdered sugar until light and fluffy.
- In a small bowl, mix EarthChimp choc with warm water until smooth. (This helps it blend beautifully into the filling.)
- Add the chocolate mixture, cocoa powder, vanilla, and salt into the cream cheese mixture. Beat until fully combined and creamy.
- Carefully spread the chocolate layer over the strawberries — like you’re icing a cake.
- Place in the freezer for 10 minutes to set slightly.
- Melt the chocolate chips and coconut oil in 30-second intervals in the microwave, stirring between each round until smooth.
- Remove the bark from the freezer and drizzle the melted chocolate over the top.
- Return to the freezer for about 30 minutes, or until fully hardened.
- Break into pieces… and enjoy immediately 😍
