No-Bake Chocolate Peanut Butter Protein Bars

These dreamy bars are chewy, chocolatey, and packed with plant-based power 💥. Just a handful of simple ingredients (and zero oven time!) — they’re perfect for busy days, post-workout bites, or anytime your sweet tooth kicks in. Bonus? They’re made with EarthChimp choc for that delicious, gut-friendly fuel. 🙌 

Ingredients

  • 1 cup rolled oats 
  • 1/4 cup almond flour 
  • 1/4 cup EarthChimp choc 
  • 1/2 cup maple syrup 

  • 1 cup natural peanut butter 
  • 1 tsp vanilla extract 
  • For the topping: 1/2 cup melted dark chocolate + 1 tbsp coconut oil 

Instructions

  • Line a small pan (8x8 or loaf tin) with parchment paper. 
  • In a bowl, mix oats, almond flour, and EarthChimp choc. 
  • Stir in peanut butter, maple syrup, and vanilla until fully combined — mixture should be thick and sticky. 
  • Press the mixture firmly into your lined pan. 
  • Melt dark chocolate with coconut oil, then pour over the top. Smooth it out. 
  • Chill in the fridge for at least 1 hour (or until set). 
  • Slice into bars. Store in the fridge and try not to eat them all at once 😉
