Peanut Butter Chocolate Crunch Balls

These Peanut Butter Protein Balls are the no-bake snack you'll want stashed in your freezer at all times. Creamy peanut butter, crushed rice cakes for crunch, melted chocolate, a hit of EarthChimp vanilla — and 10 minutes of actual effort. Make a batch on Sunday and you're sorted for the week.

Ingredients:

  • 2/3 cup runny peanut butter
  • 1/4 cup maple syrup or honey
  • 1/4 cup EarthChimp Vanilla protein powder
  • 1 cup crushed rice cakes
  • 1/2 cup chocolate chips

Optional: extra crushed rice cakes + flaky salt for topping

Instructions:

  1. In a large bowl, mix together the peanut butter, maple syrup, EarthChimp vanilla protein powder, and crushed rice cakes until fully combined. The mixture should be thick enough to roll.
  2. Roll into balls roughly the size of a tablespoon — you should get about 14. Place on a parchment-lined tray.
  3. Melt the chocolate chips (microwave in 30-second bursts, stirring between each). Dip or drizzle the balls in melted chocolate and return to the tray.
  4. Sprinkle with extra crushed rice cakes and a pinch of flaky salt if using. Freeze for at least 1 hour before eating. Store in the freezer for up to 2 weeks.
