Pumpkin Protein Muffins

If a fall candle turned into breakfast — this would be it. 🍂 These soft, protein-packed muffins are full of pumpkin, oats, and cinnamon-y goodness. Made with EarthChimp vanilla, they’re naturally sweet, nutrient-dense, and make the perfect grab-and-go snack for busy days. 

Ingredients

  • 2 small ripe bananas 
  • 1 egg (sub: flax egg – 1 tbsp flax + 3 tbsp water for plant-based
  • 1 cup cottage cheese (sub: unsweetened plant-based yogurt for vegan
  • 1/4 can pumpkin purée (about 1/2 cup) 
  • 3/4 cup almond milk 
  • 2 scoops EarthChimp vanilla 
  • 1 heaping cup rolled oats 
  • Cinnamon to taste (1–2 tsp is perfect) 

Optional add-ins:

  • Sugar-free mini chocolate chips 
  • Raisins 

Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin. 
  • In a blender or large bowl, mash bananas and mix with egg, cottage cheese, pumpkin, almond milk, and vanilla protein. 
  • Stir in oats and cinnamon until evenly combined. 
  • Fold in your favorite add-ins — choco chips or raisins, or both! 
  • Divide into muffin cups (3/4 full) and bake 18–22 mins, or until tops are set and lightly golden. 
  • Let cool a bit, then devour. These are SO GOOD warm. 😍
