Vegan Protein Waffles

🕥 Prep time: 15 mins | 🥣 Serving: 4 waffles | Recipe by: @serene.trail

Most mornings, breakfast is a compromise — fast wins, nutrition loses. These protein waffles flip that. Made with whole wheat flour, plant-based milk, and a half cup of EarthChimp Vanilla, each batch packs real protein into a crispy-edged waffle that actually holds you till lunch. No eggs, no dairy, no drama. Just mix, pour, and cook till the steam stops. Weekday mornings sorted.

Ingredients

  • 1½ cups whole wheat flour (or 2 cups all-purpose)
  • ½ cup EarthChimp Vanilla protein powder
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder

  • ½ tsp salt
  • ¼ cup melted coconut oil
  • 2 cups plant-based milk (room temp)

Instructions

  1. Whisk together the flour, EarthChimp Vanilla, sugar, baking powder, and salt in a large bowl until evenly combined.
  2. Add the melted coconut oil and plant-based milk. Fold together until just combined — a few lumps are totally fine and actually keep the waffles light.
  3. Preheat your waffle iron and grease it well. Pour in enough batter to fill the plates without overflowing.
  4. Cook for 4–6 minutes. Your waffles are done when the steam stops rising from the iron — that's the real tell, no guessing needed.
  5. Serve straight away with your toppings of choice — fresh berries, a drizzle of maple syrup, or nut butter all work brilliantly.
