White Choc & Raspberry Energy Balls

Soft, creamy, and seriously addictive — these no-bake energy balls are the perfect fridge-friendly snack 💫 A mix of cashew butter, raspberry yogurt, and EarthChimp vanilla makes every bite a creamy, cookie-dough moment with little bursts of tart raspberry and white choc.

Ingredients

  • 1/2 cup cashew butter
  • 2/3 cup raspberry yogurt (or plain + raspberry jam)
  • 1/3 cup maple syrup
  • 1/2 cup coconut or almond flour
  • 3/4 cup oat flour
  • 1 scoop EarthChimp vanilla

  • 1 tsp vanilla extract
  • 3 tbsp vegan white choc (chopped)
  • 4 tbsp freeze-dried raspberries
  • Pinch salt
  • 3.5 oz vegan white choc (for dipping)

Instructions

  • Mix into a soft dough.
  • Roll into balls (1–1.5 tbsp).
  • Chill while you melt choc.
  • Dip/drizzle + top with raspberries.
  • Let set. Store in fridge.
