Mint Chocolate Chip Nice Cream

Creamy, dreamy, and secretly packed with protein — this frozen treat tastes like dessert but pulls its weight like a real meal. No ice cream maker, no guilt, no dairy.

Ingredients:

  • 3–4 very ripe frozen bananas
  • ¼ cup almond butter
  • 2 scoops EarthChimp Chocolate protein powder
  • 2 Tbsp Dutch cocoa powder
  • ¼ tsp peppermint extract
  • Pinch salt
  • Splash plant milk if needed
  • Top with crushed pistachios and mint leaves

Instructions:

  1. Make sure your bananas are fully frozen — ideally overnight. Break them into chunks before freezing so your blender doesn't cry.This is the make-or-break step. Half-frozen bananas = icy soup.
  2. Add the frozen banana chunks, almond butter, EarthChimp Choc, cocoa powder, peppermint extract, and salt to a high-speed blender or food processor.
  3. Add just a small splash of plant milk — start with 1–2 tbsp. Blend, scraping down the sides as needed, until completely smooth and creamy.Add more plant milk only if it's truly stuck. Less liquid = thicker nice cream.
  4. Taste and adjust — want more mint? Add a tiny drop more extract. More chocolate? A pinch more cocoa.Peppermint extract is POWERFUL. Go slow — you can always add more, never less!
  5. Serve immediately for soft-serve texture, or transfer to a freezer-safe container and freeze for 20–30 minutes for a scoopable consistency.
  6. Scoop into bowls or cones and top with crushed pistachios and fresh mint leaves. Serve right away!
