Ingredients:

  • 2 cups almond flour
  • 1/2 cup unsweetened cacao powder
  • 2 teaspoons baking powder
  • 1 tsp espresso powder (optional)
  • 1 scoop of EarthChimp choco
  • 1/2 teaspoon sea salt
  • 1/3 cup coconut oil, melted and cooled to room temperature
  • 1 cup monk fruit sweetener
  • 2 eggs
  • 1/2 cup unsweetened coconut milk
  • 2 teaspoons vanilla extract
  • 3/4 cup of chocolate chips (sugar-free)
  • 1/4 cup walnuts, chopped

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius) and grease a baking dish.
  • In a large mixing bowl, combine the almond flour, cacao powder, baking powder, espresso powder (if using), chocolate protein powder, and sea salt.
  • Add the melted coconut oil, monk fruit sweetener, eggs, coconut milk, and vanilla extract to the dry ingredients. Mix until well combined.
  • Fold in the chocolate chips and chopped walnuts until evenly distributed throughout the batter.
  • Pour the batter into the prepared baking dish and spread it out evenly.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and allow the brownies to cool to room temperature in the baking dish.
