Pumpkin Chocolate Chip Protein Cookies

Fall baking, minus the fuss!! 🎃 Pauline's pumpkin chocolate chip cookies are soft, cozy, and warmly spiced, and they come together in ONE bowl on ONE tray. Canned pumpkin, a spoonful of peanut butter, and a scoop-up of Chocolate EarthChimp make them a little more wholesome than your average cookie, without losing any of the melty-chip goodness. Bake a tray on Sunday and you've got an easy afternoon treat sorted for the week.

Ingredients:

  • 1 cup flour
  • 2 scoops EarthChimp choc
  • 1/3 cup brown sugar
  • 1 tsp baking powder
  • Pinch of salt

  • 1 tbsp pumpkin pie spice
  • 1 cup pumpkin purée (canned is perfect)
  • 2 tbsp peanut butter
  • 1/3 cup dairy-free chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C)* and line a baking tray with parchment paper.
  2. In a large bowl, mix the pumpkin purée, peanut butter, and brown sugar until smooth.
  3. Add the flour, Chocolate EarthChimp, baking powder, pumpkin pie spice, and salt. Stir until just combined. Don't overmix!
  4. Gently fold in the chocolate chips.
  5. Scoop rounded tablespoons of dough onto the tray and flatten each one slightly (they won't spread much).
  6. Bake for about 12 minutes, until the edges are set.
  7. Let them cool on the tray for a few minutes, then dig in! 🍪
