Strawberry Blended Overnight Oats

Some mornings you just want breakfast to take care of itself. That's exactly what this recipe does. Blend everything the night before, pop it in the fridge, and wake up to something thick, creamy, and actually satisfying — no blender drama at 7am required.

It comes together in about 5 minutes, keeps in the fridge overnight, and makes two jars — so you've got tomorrow handled too. The frozen strawberries do most of the work, and a couple scoops of EarthChimp vanilla tie everything together without making it taste like a supplement. Just a good breakfast that happens to have 20g of protein in it.

Ingredients:

  • 1 cup rolled oats
  • 2 tbsp chia seeds
  • 2 scoops EarthChimp Vanilla protein
  • 1.5 cups almond milk
  • 1 cup frozen strawberries
  • 1/2 cup coconut yogurt

Instructions:

  1. Add oats, chia seeds, EarthChimp vanilla, almond milk, frozen strawberries, and coconut yogurt to a blender.No need to thaw the strawberries — frozen gives it that thick, creamy texture.
  2. Blend until completely smooth. Taste and adjust — a little extra almond milk loosens it up if needed.
  3. Pour into jars or meal prep containers. Seal and refrigerate overnight (or at least 4 hours).Makes 2 generous jars — perfect for back-to-back mornings.
  4. In the morning, give it a stir. Top with sliced banana, a drizzle of nut butter, and a handful of pecans. Grab a spoon — done.
