Zesty Blueberry Lemon Poppy Muffins: A Protein-Packed Delight!

Hey there, baking enthusiasts!

Get ready to elevate your morning routine with these irresistible Blueberry Lemon Poppy Muffins. Bursting with tangy lemon flavor, juicy blueberries, and a hint of crunch from poppy seeds, these muffins are not only delicious but also packed with protein, thanks to the addition of protein powder. So, grab your apron, and let's get baking!


For the muffins:

1 cup all-purpose or whole wheat flour

1/2 cup protein powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup melted butter or olive oil

3/4 cup monk sugar

2 large eggs

Juice of 2 lemons

Zest of 2 lemons

1 cup Greek yogurt

1/2 tbsp poppy seeds

1 cup fresh or frozen blueberries

For the glaze:

1 cup powdered sugar

1 tbsp lemon juice (or more, to reach desired consistency)


Preheat oven to 375°F (190°C) and prepare muffin tin.

Whisk flour, protein powder, baking soda, and salt in a bowl.

In another bowl, mix melted butter/oil, monk sugar, eggs, lemon juice/zest, and Greek yogurt until smooth.

Gradually add wet ingredients to dry, stir until just combined.

Fold in poppy seeds and blueberries.

Divide batter among muffin cups, bake 18-20 mins.

Cool in pan for 5 mins, then transfer to wire rack to cool completely.

Prepare glaze by mixing powdered sugar and lemon juice.

Drizzle glaze over cooled muffins.
