Ingredients

For the muffins:

  • 1 cup all-purpose or whole wheat flour
  • 1/2 cup Earthchimp plain
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup melted butter or olive oil
  • 3/4 cup monk sugar
  • 2 large eggs
  • Juice of 2 lemons
  • Zest of 2 lemons
  • 1 cup Greek yogurt
  • 1/2 tbsp poppy seeds
  • 1 cup fresh or frozen blueberries

For the glaze:

  • 1 cup powdered sugar
  • 1 tbsp lemon juice (or more, to reach desired consistency)

Instructions:

  • Preheat oven to 375°F (190°C) and prepare muffin tin.
  • Whisk flour, protein powder, baking soda, and salt in a bowl.
  • In another bowl, mix melted butter/oil, monk sugar, eggs, lemon juice/zest, and Greek yogurt until smooth.
  • Gradually add wet ingredients to dry, stir until just combined.
  • Fold in poppy seeds and blueberries.
  • Divide batter among muffin cups, bake 18-20 mins.
  • Cool in pan for 5 mins, then transfer to wire rack to cool completely.
  • Prepare glaze by mixing powdered sugar and lemon juice.
  • Drizzle glaze over cooled muffins.
