Sweet, crunchy, chocolatey bites of joy šš« These Apple Protein Bites are the perfect snack to beat the mid-afternoon slump ā or to sneak in something fun post-workout. Featuring EarthChimp vanilla, theyāre protein-packed, totally plant-based, and super easy to throw together!
Ingredients
- 2 apples
- 1/3 cup peanut butter (or almond/sunflower butter)
- 1/4 cup EarthChimp vanilla
- A handful of peanuts (or any nuts ā or skip entirely!)
- Cinnamon to sprinkle
- Melted dark chocolate (melt with a bit of coconut oil)
Instructions
- Slice apples into thin rounds and remove the cores (use a small knife or cookie cutter).
- Lay the slices out on a lined cutting board.
- In a bowl, mix peanut butter and EarthChimp vanilla until smooth.
- Spread the mixture on top of each apple slice.
- Sprinkle with chopped peanuts and cinnamon.
- Drizzle with melted dark chocolate + a touch of coconut oil.
- Freeze for 10 minutes to set, then transfer to the fridge.
- Snack time = anytime! š„
