Apple Protein Bites

Sweet, crunchy, chocolatey bites of joy 🍏🍫 These Apple Protein Bites are the perfect snack to beat the mid-afternoon slump β€” or to sneak in something fun post-workout. Featuring EarthChimp vanilla, they’re protein-packed, totally plant-based, and super easy to throw together!

Ingredients

  • 2 apples
  • 1/3 cup peanut butter (or almond/sunflower butter)
  • 1/4 cup EarthChimp vanilla
  • A handful of peanuts (or any nuts β€” or skip entirely!)
  • Cinnamon to sprinkle
  • Melted dark chocolate (melt with a bit of coconut oil)

Instructions

  • Slice apples into thin rounds and remove the cores (use a small knife or cookie cutter).
  • Lay the slices out on a lined cutting board.
  • In a bowl, mix peanut butter and EarthChimp vanilla until smooth.
  • Spread the mixture on top of each apple slice.
  • Sprinkle with chopped peanuts and cinnamon.
  • Drizzle with melted dark chocolate + a touch of coconut oil.
  • Freeze for 10 minutes to set, then transfer to the fridge.
