Soft, fudgy, and packed with plant-powered fuel! These Chocolate Banana Oat Muffins are a dream come true for your snack cravings or breakfast on the run. Featuring EarthChimp choc, they’re perfectly sweet, super easy, and SO satisfying. 💪🍌
Ingredients
- 3/4 cup oats
- 2 ripe bananas
- 1 cup EarthChimp choc
- 1/2 cup plant-based milk (almond, oat, or your fave)
- 1/2 tsp baking powder
- 1 egg (or flax egg for vegan: 1 tbsp flaxseed + 3 tbsp water)
Instructions
- Preheat your oven to 350°F (175°C).
- In a blender or bowl, mash the bananas and mix with the egg (or flax egg).
- Add the oats, EarthChimp choc, plant-based milk, and baking powder.
- Mix until smooth.
Pour into lined or greased muffin tins (makes about 6). - Bake for 20 minutes — until a toothpick comes out clean.
- Let them cool… or don’t. They’re delicious warm! 😋
