Double Choc Protein Muffins

Rich, gooey, and packed with plant-based goodness—these double chocolate protein muffins are an absolute treat. Perfect for breakfast, snack time, or whenever your sweet tooth kicks in... but without the sugar crash 😍 Bonus: they’re powered up with EarthChimp choc vegan powder for that protein boost you’ll actually enjoy 💪

Ingredients

  • 1 ½ ripe bananas, mashed
  • ¼ cup nut butter (almond or peanut butter)
  • 3 tbsp maple syrup
  • ½ tsp coffee powder
  • Pinch of salt
  • ¾ cup flour (can sub oat or gluten-free)
  • ¼ cup cocoa powder
  • 1 ½ tsp baking powder
  • ⅓ cup plant milk (almond, soy, oat—your pick!)
  • ⅓ cup EarthChimp choc vegan powder
  • Dark chocolate chips (dairy-free)

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, mash your banana until smooth.
  • Mix in the nut butter, maple syrup, coffee powder, and salt.
  • Add the flour, cocoa powder, baking powder, plant milk, and EarthChimp choc vegan powder. Stir until smooth.
  • Scoop into a lined or greased muffin pan.
  • Top each with a few dark choc chips (go on, be generous!).
  • Bake for 20–25 mins. Let cool before munching (if you can wait!).
