Rich, gooey, and packed with plant-based goodness—these double chocolate protein muffins are an absolute treat. Perfect for breakfast, snack time, or whenever your sweet tooth kicks in... but without the sugar crash 😍 Bonus: they’re powered up with EarthChimp choc vegan powder for that protein boost you’ll actually enjoy 💪
Ingredients
- 1 ½ ripe bananas, mashed
- ¼ cup nut butter (almond or peanut butter)
- 3 tbsp maple syrup
- ½ tsp coffee powder
- Pinch of salt
- ¾ cup flour (can sub oat or gluten-free)
- ¼ cup cocoa powder
- 1 ½ tsp baking powder
- ⅓ cup plant milk (almond, soy, oat—your pick!)
- ⅓ cup EarthChimp choc vegan powder
- Dark chocolate chips (dairy-free)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mash your banana until smooth.
- Mix in the nut butter, maple syrup, coffee powder, and salt.
- Add the flour, cocoa powder, baking powder, plant milk, and EarthChimp choc vegan powder. Stir until smooth.
- Scoop into a lined or greased muffin pan.
- Top each with a few dark choc chips (go on, be generous!).
- Bake for 20–25 mins. Let cool before munching (if you can wait!).
