Protein Waffles with Raspberry

These chocolate waffles are everything — fluffy inside, crisp outside, and supercharged with EarthChimp Choc. Perfect for slow mornings, quick fuel, or anytime you want a sweet + satisfying plant-powered bite 💪🍫

Ingredients

  • 1 cup Trader Joe’s Gluten-Free Buttermilk Pancake & Waffle Mix
  • 1 scoop EarthChimp choc
  • 1 tbsp unsweetened cocoa powder (optional — but highly recommended!)
  • 1 egg (sub with flax egg to keep it vegan)
    ¾ cup almond milk (or any plant-based milk)
  • 1 tbsp avocado oil or melted coconut oil
  • 1 tsp vanilla extract
  • Optional sweetener: 1 tbsp maple syrup (or skip honey if plant-based)
  • Optional mix-ins: dairy-free chocolate chips, cinnamon, chia or flax seeds

Instructions

  • Preheat your waffle iron.
  • In a bowl, whisk together the dry ingredients: waffle mix, EarthChimp choc, cocoa powder.
  • Add the egg (or flax egg), milk, oil, vanilla, and sweetener. Mix until smooth.
  • Fold in any mix-ins you love.
    Pour batter into waffle iron and cook until crispy and golden.
  • Serve with fresh raspberries and a drizzle of maple syrup! 🍓🧇
