Pumpkin Spice Chia Pudding

It’s pumpkin season!!! 🎃✨ And this one’s an instant cozy classic. Made with creamy yogurt, warming spices, and our dreamy EarthChimp vanilla, this chia pudding hits just right — whether you're powering through your morning or winding down with something sweet-but-nourishing. 🙌 Bonus? It’s packed with protein, fiber, and fall flavor in every bite.

Ingredients

  • 1/3 cup pumpkin purée
  • 1 cup coconut-based vegan yogurt
  • 1 scoop EarthChimp vanilla
  • 1/2 tsp pumpkin spice
  • 3 tbsp chia seeds

  • 1/2 tsp nutmeg
  • Ceylon cinnamon to taste
  • Drizzle of maple syrup (instead of honey 🍁)
  • Nut butter (almond, cashew, or peanut — your call!)
  • Cycling seeds & dark chocolate shell

Instructions

  • In a mixing bowl, combine the pumpkin purée, yogurt, EarthChimp vanilla, pumpkin spice, vanilla extract, nutmeg, and cinnamon.
  • Stir in the chia seeds until well distributed.
  • Let the mixture sit for 5–10 mins, then give it a stir to prevent clumping.
  • Cover and refrigerate for at least 2 hours or overnight for best texture.
  • When ready to serve, drizzle with maple syrup and a spoonful of your fave nut butter.
  • Top with dark chocolate shell or cycling seeds if using. Enjoy straight from the jar or cup!
