Snack cravings? Sorted. 🙌 These no-bake cherry + carob chip energy balls are sweet, fudgy, and loaded with plant power thanks to EarthChimp. Perfect for a grab-and-go boost!
Ingredients
- 1 cup frozen dark cherries, pitted (let thaw slightly)
- 3/4 cup rolled oats
- 1/4 cup sunflower seed butter (or almond butter)
- 2 scoops EarthChimp plain (or vanilla for extra sweetness)
- 1/3 cup carob chips (half pulsed, half whole for crunch)
- 1–2 tbsp maple syrup
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- In a food processor, blend cherries until smooth.
Add rolled oats, sunflower seed butter, EarthChimp, maple syrup, vanilla, and salt. Pulse until a sticky dough forms. - Mix in half the carob chips, saving the rest to fold in for texture.
- Roll mixture into balls (about 1–1.5 inches wide).
- Place on a tray and chill in the fridge for 20–30 minutes to set.
