Chocolate Chip Protein Muffins

          Soft, fluffy, and loaded with dark chocolate chips — these muffins are a chocolate lover’s dream with a sneaky protein boost 💪. Made with EarthChimp choc, they’re perfect for breakfast, snack-time, or a little post-dinner treat. Simple, wholesome, and YUM!
Ingredients
- 1/4 cup avocado oil (or melted coconut oil)
 - 1 cup all-purpose flour
 - 2 scoops EarthChimp choc
 - 1 egg (sub: flax egg for vegan version – 1 tbsp flax + 3 tbsp water)
 - 1 1/2 tsp baking powder
 
- 1/4 cup honey (sub: maple syrup or agave for vegan option)
 - 1 tsp vanilla extract
 - 2 tbsp stevia or brown sugar
 - 1/3 cup buttermilk (sub: 1/3 cup plant milk + 1 tsp lemon juice)
 - 3/4 cup dark chocolate chips
 - 1/4 tsp salt
 
Instructions
- Preheat oven to 350°F (175°C) and line or grease a muffin tin.
 - In a large bowl, whisk together egg (or flax egg), oil, honey, vanilla, stevia, and buttermilk until smooth.
 - In a separate bowl, mix flour, EarthChimp choc, baking powder, and salt.
 - Combine wet and dry ingredients — don’t overmix!
 - Fold in chocolate chips.
 - Scoop batter into muffin cups (about 3/4 full).
 - Bake for 15–18 mins or until a toothpick comes out clean.
 - Let cool (or eat warm… we get it). 🫶
