



Pumpkin Spice Cookie Bars

Your kitchen is about to smell AMAZING. These pumpkin cookie bars are everything we love about fall — cozy spices, creamy white chocolate, and a soft, chewy bite that’s secretly boosted with EarthChimp vanilla. Bake them once, and we promise… they’re gonna be on repeat all season 🍂✨
Ingredients
- 1/2 cup plant-based butter (swap for vegan butter 🧈)
- 1/2 tbsp pumpkin spice
- 1/2 cup organic cane sugar
- 1/2 cup coconut sugar (or brown sugar)
- 1/2 cup pumpkin purée
- 1 flax egg (1 tbsp flaxseed + 3 tbsp water, let sit 5 min)
- 1 tsp vanilla extract
- 2/3 cup all-purpose flour
- 1/3 cup EarthChimp vanilla
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup vegan white chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper.
- In a large bowl, cream together butter, pumpkin spice, sugar, and brown sugar until smooth.
- Add pumpkin purée, flax egg, and vanilla extract. Mix until combined.
- In a separate bowl, whisk together flour, EarthChimp vanilla, baking powder, and salt.
- Gradually fold dry ingredients into wet, mixing until a soft dough forms.
- Stir in white chocolate chips.
- Spread dough evenly into the prepared baking pan.
- Bake for 22–25 mins or until edges are golden and center is set.
- Cool completely before slicing into bars. (Trust us — it’s worth the wait 😉)
