This two-part recipe has your back with an easy overnight oats base + fluffy protein-packed blueberry pancakes ā both made with our EarthChimp Vanilla.
Ingredients
Protein Overnight Oats
- 1/2 cup organic rolled oats
- 1 tbsp chia seeds
- 1 tbsp EarthChimp vanilla
- 1/2ā1 cup plant milk (like oat or almond)
- Sliced fruit of choice (we love strawberries + kiwi šš„)
High Protein Blueberry Pancakes
- 1/2 cup fresh or frozen blueberries
- 1/2 cup plant milk (oat or almond works great)
- 1 flax egg (1 tbsp flaxseed + 2.5 tbsp water, let sit for 5 mins)
- 1 tbsp coconut sugar (or maple syrup)
- 1 tsp vanilla extract
- 2 scoops EarthChimp vanilla
- 1 tsp baking powder
- 1/2 cup all-purpose flour (use oat flour for gluten-free option)
Instructions
- Make your oats: In a jar or bowl, mix rolled oats, chia seeds, EarthChimp vanilla, and plant milk. Stir well and refrigerate overnight. Add fruit just before serving.
- Prep the pancakes: In a mixing bowl, whisk together plant milk, flax egg, coconut sugar, and vanilla.
- Add EarthChimp vanilla, baking powder, and flour. Mix until smooth (don't overmix).
- Gently fold in the blueberries.
- Heat a non-stick pan over medium heat and lightly grease if needed.
- Pour in small scoops of batter and cook for 2ā3 minutes on each side until golden and fluffy.
- Stack 'em high and enjoy with your overnight oats on the side for a seriously satisfying start! š„š„
