These spooky-sweet Pumpkin Spice Protein Pops are packed with seasonal flavor and powered by EarthChimp choc. Wrapped in a cozy coat of vegan white chocolate and shaped like jack o’ lanterns — they’re gluten-free, dairy-free, and seriously irresistible.
The original recipe and video were created by the amazing @ez2bglutenfree using EarthChimp choc — and we couldn’t help but share our own version based on her delicious creation! 🎃✨
Ingredients
For the filling:
- 2 scoops EarthChimp choc
- 1/2 cup pumpkin purée (unsweetened)
- 1/4 cup almond or cashew butter
- 1 tbsp maple syrup
- 1/2 tsp pumpkin pie spice
- 1/4 cup almond flour (adjust as needed for firmness)
- Pinch of sea salt
For the coating:
- 1/2 cup vegan white chocolate chips
- 1 tsp coconut oil (optional, helps with smooth melting)
💡 No white choc? Swap for dark chocolate if preferred — it's just as delicious and still festive!
Instructions
- Mix all filling ingredients in a bowl until a thick dough forms.
- Melt white chocolate with coconut oil until smooth.
- Spoon chocolate into silicone pumpkin molds and coat the sides.
- Press in the filling, then cover with more chocolate to seal
- Freeze 15–20 mins or until firm. Pop out & enjoy!
