Choco Seitan Banana Bread

Rich, chocolatey, and packed with 20g of protein per slice! This banana bread is basically a dessert that loves you back. The seitan base gives it serious density and chew, while the banana keeps things moist and naturally sweet. Perfect for meal prep or a grab-and-go breakfast!

Ingredients

  • 4 ripe bananas, mashed
  • 230g (~2 cups) vital wheat gluten (see GF option below)
  • ½ cup cane sugar (see sugar-free option below)
  • 2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 scoop EarthChimp Choc
  • 1 tbsp cocoa powder

Swaps & Substitutions

  • Sugar-Free 🍌 Use 1–2 extra ripe bananas instead of cane sugar, or swap in ½ cup monk fruit sweetener.
  • Gluten-Free 🌾 Replace vital wheat gluten with 2 cups oat flour + ¼ cup coconut flour + 1 tbsp psyllium husk. Texture will be softer and more cake-like.

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flax eggs (ground flaxseed + water) and let sit 5 mins until gel-like.
  3. Combine all ingredients in a large bowl and mix until a dough forms.
  4. Press into a parchment-lined bread pan.
  5. Bake 30 mins uncovered, then cover with foil and bake another 30 mins.
  6. Let cool, slice into 10, and enjoy!
