Frozen Strawberry Yogurt Clusters

Afternoons get hot, and cravings hit before dinner's anywhere close. These frozen strawberry clusters are your answer — juicy fruit and creamy yogurt swirled with EarthChimp Choc, dipped in a rich chocolate coating, then frozen into little bite-sized treats. No oven, no fuss, just a freezer and 15 minutes of hands-on time.

Ingredients

  • 1½ cups diced strawberries
  • 1 cup unsweetened vanilla coconut yogurt
  • 1 tbsp honey

  • 1 tsp vanilla extract
  • 2 tbsp coconut oil
  • 1 scoop EarthChimp Choc
  • 2 tbsp organic cacao chips

Instructions

  1. Dice 1½ cups of strawberries and add them to a mixing bowl.
  2. Blend 1 cup of yogurt with 1 scoop of EarthChimp Choc. Once smooth, add it to the bowl with the strawberries, along with the honey and vanilla extract, and mix everything together.
  3. Spread the mixture onto a tray or plate lined with parchment paper and freeze for about an hour.
  4. Melt the coconut oil and cacao chips together in a pan over low heat, stirring until you've got a thin, pourable chocolate sauce.
  5. Let the sauce cool slightly, then dip your frozen clusters in and pop them back in the freezer to harden fully.
  6. When you're ready to dig in, let them thaw for 10–20 minutes and enjoy!
